Quinoa and Turkey Lettuce Wraps

A healthy, quick and flavorful recipe from the Biggest Loser Resort.

Per serving: 243 calories, 9 grams fat, 12grams protein, 35 grams carbohydrates, 4 grams dietary fiber

I have been gone for quite awhile! Today is going to be short and sweet.  I have missed being accountable to myself and whoever reads this!  I have found out the hard way by doing that.. that I little by little as I slacked in tracking my goals and my progress, I FORGOT about my goals, myself and what makes me feel good and alive.  I have been back in the healthy state of life again for about a month and everyday is another day to learn, grow and become my best self!!  Excited to regain my momentum and this time...keep going!

Tonight for dinner I will be eating one of my favorite Biggest Loser Resort Recipes so I thought I should share it with you!

Yield: Serves 4
12 Boston lettuce leafs
2 ½ cups quinoa, cooked
1 cup ground turkey 93/7, cooked
¼ cup pine nuts
1/8 cup fresh lemon juice
¼ cup green onions, chopped
¼ cup carrots, shredded
¼ cup dried cranberries
6 tablespoons Hoisin sauce


  1. Place 3 lettuce leafs on each plate.
  2. Mix together quinoa, ground turkey, pine nuts, green onion, carrot and cranberries.
  3. Add 2 ounces of the mixture onto the lettuce leafs.
  4. Drizzle equal amounts of Hoisin sauce onto each cup.
  5. Garnish with fresh chopped green onion.
